Momma's Gumbo Secrets

1. The Okra Magic: A lot of folks get scared of Okra because of the texture, but don't you worry about that. When we cook it low and slow in the Crock Pot, the texture melts away completely. It turns into pure velvet and acts as a thickener to create a beautiful dark gravy. 2. Why Ben's Original? Regular white rice gets gummy when you pour hot stew on it. Converted or Parboiled rice stays fluffy and firm, soaking up that juice without turning into baby food.

Ingredients

Plant Proteins

  • 1 pkgBeyond Meat Hot Italian Sausage: Diced small
  • 1 pkgBeyond Meat Chicken Pieces: Diced small
  • 1 tbspCountry Crock Plant Butter

The Spicy Rub

  • 1 tbspSmoked Paprika
  • 1 tspGround Cumin
  • 1 tspLiquid Smoke
  • 1 tspPink Salt

The Green Trinity

  • 3Green Bell Peppers: Diced
  • 1Red Bell Pepper: Diced
  • 1White Onion
  • 1 stalkCelery
  • 1 bagPictsweet Farms Cut Okra
  • 5 clovesGarlic
  • 1 bunchGreen Onions

The Roux & Base

  • 1/2 cupOil
  • 1/2 cupFlour
  • 64 ozVeggie Broth
  • 1 tbspSlap Ya Mama
  • 1 tspOLD BAY

Method

    Season and Sear

    Dice your veggies and meat. Toss the meat in the Spicy Rub, then fry in plant butter for 6-8 minutes until crispy. Dump it all - oil and all - into the Crock Pot.

    Build the Roux

    Whisk your oil and flour in the skillet for 10-12 minutes until it's the color of peanut butter. Stir in the trinity veggies for 2 minutes, then scrape into the Crock Pot.

    The Slow Cook

    Add the broth, okra, garlic, and seasonings. Cover and cook on High for 4 hours (or Low for 6).

    Serve Fluffy

    Cook your Ben's Original Rice. Scoop into bowls and ladle that velvet gumbo over the top. Garnish heavy with green onions! Momma's Tip: This Gumbo acts as a natural thickener. The longer it sits, the better that dark gravy gets.
